Kilbeggan Handmade Chocolatier, Michael Donegan is a strong believer in producing chocolate the “new old-fashioned way” as he likes to call it. Inspired by the chocolate his grandfather used to give him as a boy, those early taste-bud memories have influenced almost 90% of production day. “The taste of chocolate back in the old days was very different to what it is now and we’ve worked hard to replicate that. Based on sample testing and customer feedback from some of our more senior customers, we’re delighted to see a lot of smiles on a lot of faces and that’s a really nice feeling,” says Michael.
Kilbeggan’s Chocolatiers’ encourages chocolate connoisseurs to ‘look beyond the label’ and be able to make a clear distinction between chocolate confectionery and ‘real’ chocolate. This is no simple task as there are not many bean-to-bar manufacturers working exclusively with the raw ingredients. Producing chocolate directly from a bean is challenging work, but get it right, and the end result is always worth the effort.
