A chocolate ‘victoria’ is an edible cake made with a mixture of dark chocolate, icing and chocolate cream.
It is made with icing and melted chocolate cream and is typically used as a holiday treat.
The cake is traditionally made by dipping the cake in chocolate milk, then using a spoon to gently dip the cake into the milk, but some cakes use a pastry brush to mix the icing and cream into the cake.
It’s a popular and easy dessert recipe with a few different variations.
“If you want to get fancy, you can also make your own chocolate cake,” says Sarah Macdonald, from the Australian Chocolate Manufacturers Association (ACA).
“I like to make my own chocolate ‘cake’ and it’s a really easy way to do it.
You just have to make sure you have a little bit of patience.
The icing and the cream really make it all happen.”
She explains that the chocolate cake can be made in any recipe with the help of the pastry brush, or in a similar manner with the cream.
“Just mix it in the bowl with a spoon and it goes on a baking sheet,” she says.
“It’s not a cake that’s going to stand out or have a particular colour.”
“So it’s perfect for the holiday season and the chocolate is perfect for a chocolate bar or something like that.”

She says she makes her cakes “out of necessity” as her family are always looking for ways to make chocolate for the holidays.
“[My grandmother] was making them for Christmas and Easter and Christmas parties and so on,” she said.
“Now I just think it’s just a nice thing to do.”

“I don’t know what people do with them.
I don’t think they are sold at Christmas.
They’re probably used as Easter decorations,” she added.
“I think it is a bit weird to make your favourite chocolate cake at Christmas time.”

Photo, Supplied Sarah’s grandmother made the chocolate “virgin” cake as a gift for Sarah and her sister, but it has also been passed down through the family.
Sarah says she’s never tried to recreate the recipe for her own birthday cake, but she is happy to try it for the first time on her birthday.
“I’m hoping to be able to do something like it again, if I have to,” she explains.
The Australian Chocolate Association’s Sarah MacDougall says that while chocolate cake has a long and storied history, it is one that has evolved over the years.
One of the most important steps towards creating a successful chocolate cake is to ensure it’s prepared properly.
“You can use the cream, you don’t have to use the icing, you use a small amount of icing and then you just dip it in chocolate,” she explained.

Sarah explains that you need to use an oven that can handle a good temperature and a baking tray that can be flipped over to make it easier to work with.

There are many other ways to enjoy a chocolate dessert, but Sarah MacLeod is a fan of using the icing as a substitute for icing, or to use chocolate as the base for a cake.
“It’s all about finding something that you can use for a dessert and then adding some flavour,” she advised.
